Chunky garlic potato salad

I'll be posting some of my old stuff so here's one really great recipe!



»»» I had totally forgotten this chunky potato salad but my Hub asked me to make it. So I did and served it with grilled steaks. This portion is enough for 3-4 hungry people:
  • 10 small new potatoes diced and boiled and for the sauce just mix
  • 2 tbs chopped (spring) onion  
  • 1 large garlic glove chopped as well 
  • 2 tbs diced pickled cucumber 
  • 3 tbs mayonaise 
  • 3 tbs Creme Fraiche
  • 3 tsp diced sundried tomatoes
  • ½ tsp salt, ground pepper

Put the potato dices into cold water that barely covers them, add some salt. When it's boiling, set the alarm to 15 minutes. Cool off the dices  quickly for example on a plate. Mix the sauce and add the cold potatoes. You can replace the potatoes with root vegetables if you wish. Just make sure they're soft.

    The secret of this salad (which IS delicious!) is to chop the potatoes before boiling. It's a lot faster, too!
