Low carb food

I introduced a low carb cookbook in my Finnish blog the other day and realized that I should post the recipe here as well. I chose this one to show that  "low carb" doesn't mean "expensive and complicated".




FYI, low carb diet in brief: instead of trans fats and margarin, artificially lightened, E-coded and sugary foodettes my choice is plenty of vegetables, olive oil, butter and whole cream, meat, fish and poultry, eggs, more berries, less fruit, seeds and nuts full of nutrients plus healthy and tasty flavonoids; dark chocolate. 

This portion is for 3. You can modify the filling as you please: 

Ingredients:
  • 4 organic eggs
  • 3 dl (½ cup) whole milk
  • 1 tsp salt 
filling:
  • 200 gr mushrooms 
  • 1 onion chopped
  • 400 gr minced meat 
  • butter
  • for seasoning salt, peppers, tabasco, chili, sweet pepper, herbs etc. by choice 
  • 2 dl (½ cup) grated emmental cheese 
  1. Pre-heat the owen to 200°C (390°F).
  2. Mix eggs and milk, whisk lightly. Season with salt. 
  3. Grease a pan with butter and pour the egg mix on it. Cook for 20 minutes. 
  4. Meanwhile fix the filling. 
  5. Spread the filling on the omelet and roll. Spread the cheese on top and put back in the owen for a few minutes to melt the cheese.
